The Prosecco Valdobbiadene Jeio Extra Dry is produced in the cellars of Bisol, a long family history that represents the avant-garde of Prosecco di Valdobbiadene. With its 5 centuries, Bisol is a family story that has been handed down for more than twenty generations, who have distinguished themselves for their love for the land and its wine. Since 1542, Bisol has created an affinity with the Cartizze hill, producing bubbles whose different characters represent the soul of the various terroirs that compose it. The Prosecco Valdobbiadene Jeio Extra Dry is a fresh and elegant example of Jeio's exuberance, combining grapes from both Conegliano and Valdobbiadene. It is Produced at least 85% from Glera grapes in the area where so-called "heroic viticulture" is practiced due to the steepness of the terrain and the steep vineyards that require commitment and effort to tame. The underground cellar, which has remained intact over the centuries, is the perfect place for the maturation of wines, with the temperature always maintained between 10°C and 15°C throughout the year. Produced with the historic Martinotti-Charmat method, the must, after decanting, ferments for approximately 15/20 days in steel tanks. The sparkling process, which begins once the base wine has been clarified to maintain the varietal aromas, takes place in autoclaves for at least 30 days.
