The Story

In Rosà, in the province of Vicenza, the Capovilla company distills various liqueurs, produced from various types of fruit. Among these is the Capovilla Elderberry Distillate. The company's distillery operations began in the 1970s, when founder Vittorio Capovilla's passion for winemaking was combined with his interest in liqueurs. Initially employed in the maintenance of winemaking machinery, he decided to extend his experience and expertise to the world of spirits, which he learned about in other European countries, especially the Germanic ones. Thus, a simple passion transformed into a business and into highly prized products. The Elderberry Distillate begins with the harvesting of elderflowers, which are quite common in the area, and their berries. The plants grow wild without the use of harsh chemicals or other fungicides. The distillery's philosophy, in fact, calls for organic production that fully respects the environment. Shortly after harvesting, within a few hours, the wild elderberry fruit is processed and distilled. This occurs without the addition of alcohol or sugar, again in accordance with the founder's specific wishes. The juices must be pure and not "spoiled" by additives that alter their flavor or characteristics. This phase of the production process occurs at an alcohol content ranging from 78° to 100°. Following distillation, an excellent elderberry brandy is produced, with an intense aroma and beloved even beyond Italy's borders.
