The Story
The Trento Tridentum extra Brut Riserva is a sparkling wine with Controlled Designation of Origin, produced from a blend of Chardonnay (80%) and Pinot Noir (20%) grapes. This white sparkling wine is the fruit of vineyards trained using the simple Trentino pergola system and located in the classic Trento DOC territory. The Trento Tridentum extra Brut Riserva from the Cesarini Sforza winery is the perfect expression of the finest sparkling wine tradition. These vineyards from Trentino Alto Adige are planted in the Alta Valle di Cembra, at altitudes ranging from 550 to 670 meters above sea level. The vines, which are grown on sandy soil with a significant presence of porphyry, enjoy an ideal microclimate, characterized by temperature variations between day and night and proper sunlight. Microclimate and soil are two important elements that give the b>grapes aromas, flavor, and a significant minerality. The grapes are harvested by hand in the first ten days of September, after which they are subjected to soft pressing in special marmonier presses. This is followed by cold static decantation. Subsequently, the fermentation process begins in stainless steel tanks at a controlled temperature, then before bottling, a refinement phase on the lees follows, lasting approximately 6 months. After this time, the product is bottled and then undergoes a second fermentation on the lees for a minimum of 48 months. The result is a sparkling wine of the highest quality, balanced and harmonious, a true pearl of Trentino.
