The Story

Still organic white wine from Burgundy, 13.5% ABV, produced by Chantal Lescure. 100% Chardonnay, 2021 vintage. A Côte de Beaune that expresses the purity of Chardonnay through careful vinification that respects the terroir. Founded in 1975 by Chantal Lescure and Xavier Machard de Gramont, Domaine Chantal Lescure is a family estate that today manages a 19-hectare vineyard. It extends north on the slopes of Dijon and south towards Meursault. This vineyard has been entirely certified organic since 2006. The grapes are carefully selected. A pneumatic pressing of the whole grapes is carried out, followed by a light racking of the must, without the addition of sulfur. Fermentation takes place in 228-liter barrels, without stirring the lees. We use very little new wood. It is a long fermentation (4 to 8 months), with natural yeasts. Aged on the lees for 15 months.
