The Story

Whispering Angel Rosé is a still rosé AOC wine with a sweet character and a fruity aftertaste. It comes from the southern region of France, Provence. Specifically, it is a wine grown and produced by the Chateau d'Esclans company, known locally as the oldest winery in the region: the building used for storing the product, which was built around the mid-19th century, is reminiscent of Tuscan villas. The land on which the winemakers work covers 44 hectares and is located approximately 30 km from the Mediterranean coast and 60 km from the renowned city of Cannes. The harvest begins at dawn and ends at sunset: the grape varieties used in the final production of Whispering Angel Rosé are predominantly Grenache (Cannonau), but also Rolle (Vermentino), Syrah, and Cinsault. The vinification process involves destemming and light pressing of the must at 7-8°C, to prevent the mixture from oxidizing: both the grape juice with the flowers and the pressed fruit juices are vinified in stainless steel containers at a controlled temperature. Batonnage is performed twice a week using a special tool, whose movement allows the wine to be agitated. This last operation serves to suspend the residue deposited after fermentation, the mass of which is mainly made up of yeasts, calcium, and potassium salts.
