The Story
Prosecco Valdobbiadene Extra Dry, produced by the excellent winery that is a symbol of this area, Col Vetoraz, is an expression of the most authentic soul of this territory. Made exclusively from Glera grapes grown in the Santo Stefano di Valdobbiadene area, this sparkling wine reflects the choice to produce exclusively within the DOCG appellation. With its philosophy, Col Vetoraz becomes synonymous with quality in a land already distinguished by excellence: this Prosecco Valdobbiadene Extra Dry is the epitome of the unique soil and climate and the human wisdom passed down through the generations. On the hills of Valdobbiadene, now a UNESCO World Heritage Site, the grapes destined for this sparkling wine are grown using a specific system, a modified cappuccina, which is very common in this area. After checking that the fruit is ripe, every second half of September it's time for the harvest, which is done strictly by hand in full respect of tradition. In the cellar, the grapes undergo a soft white pressing. At this point, the most characteristic process for producing Col Vetoraz Prosecco Valdobbiadene Extra Dry begins: a primary fermentation with static decantation at a controlled temperature. To develop a fine and captivating perlage, the grapes are refermented in large containers using the Charmat method. The secondary fermentation takes place after about a month, or a maximum of 40 days, while the aging lasts for a variable period between one and three months. The expert work of the Col Vetoraz team achieves a perfect result, particularly in terms of residual sugar, an aspect that makes all the difference and determines the sweetness of this sparkling wine. While never compromising on quality, Prosecco Valdobbiadene Extra Dry is one of the most versatile expressions of Col Vetoraz, ideal for delighting even the less experienced palates with its harmonious bubbles.
