The Story
Still white wine, Ribolla Gialla, 13% ABV, produced by Collavini in Friuli-Venezia Giulia. 0.75 L bottle, 2021 vintage. A wine born from the passion of the Collavini family, who have been producing high-quality wines since 1896. Located in Corno di Rosazzo, a historic wine-producing area of Friuli. The grapes, which are relatively late in ripening, are harvested in late September and macerated overnight at 12°C. Fermentation, at a temperature no higher than 15°C, lasts approximately 15 days. Aged in stainless steel until the following summer. Fruity, fine, and elegant aromas reminiscent of floral essences of acacia and lemongrass. Bright straw yellow with subtle green reflections. Fresh, citrusy, and savory, yet delicate.
