The Story

The Chablis 1er Cru Vaillons from Domaine Louis Michel & Fils is a still white wine with an AOC designation produced in Chablis. We are in Burgundy, a region in central-eastern France famous throughout the world for the production of elegant and refined wines. The climate of the region is cold and humid, not surprisingly Chablis is known as "the wine that comes from the cold." Winters are long and rainy, while summers are hot and dry with significant temperature variations. The soil is calcareous, with a consistent layer of deep clay, and displays a recurring characteristic to the eyes of diners: a delicate and unexpected red-brown color. The history of the Chablis 1er Cru Vaillons stems from a fortunate intuition: abandoning aging in barriques in favor of large steel tanks, which allow the wine to express itself without artifice. This approach has allowed Chablis to become the austere emblem of natural freshness, achieved without manipulation. The star of this wine is the 100% Chardonnay grape. The vineyards, spread across approximately 25 hectares of land, face southeast and require very little human intervention. The harvest is early. The bunches, characterized by their small size and beautiful golden yellow color, are harvested in the first ten days of September and brought to the cellar for vinification. The must ferments with natural yeasts (not added) exclusively in temperature-controlled stainless steel tanks. The subsequent refinement on fine lees covers a period of no less than 12 months.
