The Story
A pas-dosé classic method sparkling wine produced by Filipa Pato & William Wouters, with no vintage indicated. A Blanc de Blancs that embodies the producers' philosophy: creating authentic wines without gimmicks, expressing the true nature of the vineyards from which they are sourced. Blend: 88% Bical, 10% Maria Gomes, 2% Cercial. 0.75L bottle. The grapes for the sparkling wines are harvested in various locations. Harvesting begins as early as August to preserve the grapes' fresh, fruity character. The grapes are hand-picked and pressed very gently. After fermentation in tanks with wild yeasts, a second fermentation takes place in the bottle using the classic method. The nose is very mineral with a hint of smokiness due to the calcareous soil. It has a distinct fruity note of pears (typical of Bical) and fennel. After some time in the glass, it also reveals thyme and honey. On the palate, it is refined, creamy, relatively smooth, and has a distinct minerality. The mid-palate is fruit-driven and the aftertaste is dry and refreshing.
