The Story

The Etna Rosso Cavanera Rovo delle Coturnie bottle embodies the power of nature and the uniqueness of one of the most beautiful islands in the world: Sicily. This still red wine comes from the dark soils surrounding the majestic volcano. The vineyard, located in northeastern Sicily, is distinguished by its soil rich in volcanic sand and its climate influenced by marine currents. Thanks to the energy of Etna's ever-changing eruptions, the terroir abundantly yields its precious offspring, including the Nerello Mascalese and Nerello Cappuccio grapes. The two grape varieties combine to form this high-quality blend, classified Etna DOC, as strong and impetuous as the unique terroir from which it originates. A member of the Volcanic collection, Etna Rosso Cavanera Rovo delle Coturnie is also born from the Di Gaetano family's passion for winemaking. Produced in the Firriato cellars, which they have owned since the 1980s, it is hand-harvested in October. The grapes, trained using the "royat cordon" system, are cultivated using methods that respect the delicate balance of such a unique natural context. During the harvest, priority is given to small grapes, characterized by hard skins rich in bloom, which best preserve the aromas and organoleptic characteristics of the grapes. Left to ferment for approximately 3 weeks, the pressed grapes are transferred to traditional wooden vats for vinification. The aging, carried out in Slavonian oak barrels, lasts 12 months and is followed by another 6 months of bottle aging.
