The Story
Jasmin is a still, dry Sicilian wine, straw yellow in color with green hues, and particularly aromatic. Produced by the Firriato winery, a company that combines tradition and innovation. Zibibbo is an aromatic variety also suitable for dry vinification, with a bouquet that recalls the scents and aromas of spring flowers and the savory marine notes from the sea. Jasmin is the perfect revelation of all this Mediterranean charm thanks to the particular soil and climate conditions found on the Borgo Guarini estate, within a hilly terroir, and on the Baglio Sorìa estate, influenced by the sea. The temperature variations between day and night favor the accumulation of olfactory components, creating a fascinating suggestion with a decisive style and exotic elegance. Jasmin is a wine that invites conviviality and the joy of being together. Jasmine flowers, citrus notes, and Mediterranean scrub characterize an unparalleled expression of the virtuous blend of hillside Zibibbo and seaside Zibibbo. The grapes are grown using an espalier system with Guyot pruning, which allows for the modification of the growth of the vine and its fruit. The early harvest is strictly done by hand at the end of August. The grapes are carefully selected and subjected to a soft pressing. They are then left to ferment in stainless steel tanks at a controlled temperature of 18°C for no more than twenty days. This is followed by aging in stainless steel tanks on the fine lees for four months. At this point, the Jasmin is ready for bottling. The result is a dry white wine, an aromatic expression of the Sicilian terroir, well-structured, pleasantly balanced, and quite persistent on both the nose and palate.
