The Story

Blanquette de Limoux Methode Traditionnelle is a sparkling wine made using the traditional method, produced by Maison Guinot. A winery with a notable tradition, founded by the winemaker and herbalist Gédéon Guinot, it produces excellent quality wines using traditional production methods. Blanquette de Limoux Methode Traditionelle is obtained using native grape varieties grown at the base of the Pyrenees mountain range, where the particular composition of the soil and favorable climatic conditions allow for the production of excellent quality grapes. Regarding production, Blanquette de Limoux Methode Traditionelle sparkling wine must be made from 90% Mauzac grapes and 5% Chenin Blanc and Chardonnay grapes, respectively. The production technique begins with a careful selection of the grapes, choosing only the finest ones, perfectly ripe and with the right level of sugar content. Vinification is then carried out directly in stainless steel for at least six months, a period during which the grapes maintain their characteristics. Fermentation then takes place directly in the bottle, following the traditional method. Finally, the wine ages on natural yeasts in the bottle for approximately two years, with manual riddling. This winery is one of the few that still rotates its bottles periodically by hand, ensuring a final product of excellent quality.
