Koval Bourbon Whiskey Single Barrel is an unfiltered single cask bourbon. Its distinctiveness lies primarily in the blend's composition, which features 51% corn alongside barley malt and millet (instead of rye), a grain rarely used in the mash. Its true trademarks, however, are its kosher certification and the exclusive use of organic products. The Koval distillery was founded in 2008 by the Birnecker brothers and was the first in Chicago since the end of Prohibition. The company philosophy requires that every stage of production be rigorously managed within the distillery, including bottling and packaging.
