The Story

Champagne Brut Ultradition is produced in France in the Champagne region, at the Laherte Frères winery, founded in 1889, which manages several plots of land, for a total of ten hectares of vineyards. Traces of its vines in the Champagne region date back to the Middle Ages. The winery is located in Chavot-Courcourt, south of the city of Reims. Champagne Brut Ultradition is one of the fruits of the winery that has oriented its choices towards environmental protection and sustainability: organic farming on several parameters. The winery's cultivation is also based on the decision to dedicate ourselves to maintaining traditions and to prefer natural methods to chemical ones. In parallel to this, there is also the use of pruning, both according to the criterion of the most suitable day to carry it out, and the use of the least invasive pruning. The grapes used for the Champagne Brut Ultradition are 30% Chardonnay, 10% Pinot Noir and 60% Pinot Meunier. As for the fermentation in steel and in 225-liter oak barrels, natural times are used in order to leave room for the spontaneity of the various phases. Rackings (one or two) are also carried out before bottling. The sugars remaining from the first fermentation are converted into alcohol and carbon dioxide during the refermentation using the Classic Method. Before bottling the wine, it is aged on the lees for at least two years.
