Natural alcoholic fermentation and malolactic fermentation begin spontaneously in wooden barrels and vats. The wines are left on their natural lees for almost a year and undergo batonnage, but without any filtering or fining. On the nose, fruity aromas are accompanied by notes of bread crust.
