A wine born from the history of an ancient monastery, with a winemaking process that respects tradition. Fermentation occurs spontaneously in buried terracotta amphorae with daily punching down and without temperature control. Maceration on the skins: 6 months. Aged for 8 months in terracotta dolia. It displays complex aromas of yellow fruit, with a pleasant spicy texture. Intense and opaque golden yellow with amber reflections. The palate is powerful and proud, unfolding with savory freshness and finishing with great depth.
