The Story

Prosecco Valdobbiadene Rustico is a fine dry white sparkling wine with the DOC designation produced in Veneto, in Valdobbiadene (province of Treviso), by the cellars of the renowned Nino Franco winery. Viticulture in this area has ancient traditions, but the first written records linking Prosecco to this territory date back to 1772. The grape variety used to produce this dry white sparkling wine is the Glera, native to Veneto and vinified as a single varietal. The strategic position, between the sea and the Prealps, guarantees a temperate climate and constant ventilation that allows the grapes to dry quickly, even in case of rain. Glera has found the ideal environment on these hills. Thanks to their steep slope, rainfall is easily drained, and the good temperature variations between day and night allow the grapes to develop aromas and fragrances. This grape variety, which until 2009 was called Prosecco and then changed to Glera to avoid confusing the wine with the grape variety, is grown using a special technique called espalier. The harvest is brought forward to the end of September and is done strictly by hand, to avoid damaging the grapes and ensure they arrive intact at the cellar, where the destemming begins, aimed at separating the grapes from the stalks, followed by a subsequent, light pressing. The resulting must is cooled and subjected to alcoholic fermentation in large steel tanks at a controlled temperature. For the sparkling wine production, the wine is then subjected to a new fermentation in large, hermetically sealed stainless steel tanks. After bottling, the sparkling wine remains in the cellar for a further 30 days before being released for sale.
