The Story
As a result of our company's long-standing commitment to researching and rediscovering original local cultivation and vinification methods, we have achieved a milestone: the true Gorizia "white" from Friulano, Istrian Malvasia and Ribolla Gialla grapes. Grapes harvested at full ripeness in several stages. Maceration with the skins in separate vats for longer or shorter periods, depending on the experience gained over the years. Spontaneous fermentation at cellar temperature with continuous manual punching-down. Racking off, racking and long ageing for 30 months on fine yeast in large Slavonian oak casks.
