The Story
Still white Riserva, 13.5% ABV, produced by Primosic in the Collio region of Friuli-Venezia Giulia. 100% Ribolla Gialla, 2019 vintage. A wine evocative of acacia blossoms, blending with chinotto peel for a sensation of enveloping minerality. The overripe grapes, harvested by hand in crates, are destemmed and placed in open vats, where fermentation begins with indigenous yeasts and the absence of sulfites, with frequent punching down. The must remains in contact with the skins for 6 days without temperature control. The finish recalls apricot pits and chestnut pulp.
