The Story

Talò Primitivo Merlot Salento IGP is the pride of the San Marzano winery, which has been active since 1962, the year it was founded by families passionate about viticulture. Today, we are a company that unites more than 1,200 collaborators in the Puglia region, in a strip of land between the Ionian and the Adriatic Seas. It is a still red, made with a blend of 50% Merlot grapes and 50% Primitivo grapes. Merlot is a grape variety with black, bloom-covered grapes, much loved by the blackbird, from which it takes its name; the Primitivo grape is the precious DOP nectar of Manduria, the Apulian region. The soil in which these two vineyards grow is characterized by a clayey mix, with a good amount of skeleton and shallowness. The harvest is done manually using baskets, during the first half of September. The grapes undergo temperature-controlled maceration and alcoholic fermentation with selected yeasts for about 10 days. The ageing of the must continues in French oak barriques for 4-6 months. The Talò Primitivo Merlot vines grow and develop near the sea and close to the Mediterranean scrub. The training system is unique, using small, ungrafted, bushes. Even very old vines have been recovered; some Primitivo vineyards date back 80 years.
