The Story
This Pecorino is made at Tenuta di Ulisse, a winery that has been emphasizing the quality of native Abruzzo wines since 2006. It is a still white with the IGT Terre di Chieti designation, whose grapes come from 100% Pecorino vines. The vines located in a particular area of Abruzzo, in Crecchio, in the province of Chieti, grow on medium-textured gravelly soil and are trained using the spurred cordon system at a height of 50 cm. The harvest is early, taking place in the first ten days of September, and is carried out strictly by hand, placing the grapes in crates. What is fascinating is, without a doubt, the vinification system, which involves the use of an exclusive cooling tunnel typical of the Ulisse estate; Here, a cre-maceration takes place. The grapes are then pressed in an inert environment, and the resulting must is clarified in a process conducted at low temperatures. The subsequent fermentation requires the must to be placed in stainless steel tanks, which guarantee a temperature of 11 degrees. The subsequent refinement takes place in stainless steel tanks for approximately 3 months and is completed in the bottle. The Abruzzo region has been the stage for the production of the best Italian wines for many years.
