Vinification with cuvée (first pressing juice), 7 months on the lees, minimal sulfur, 75% stainless steel, 25% oak barrels. Unfiltered. Aged in bottle, on the lees in 19th-century cellars at a low, constant temperature. A wine with a fine and persistent perlage.
