Aged on the lees for 6 months with weekly battonage. 90% in stainless steel and up to 10% in barrique, with a selection of historic vintages. Bottling and aging in bottle for 6 months. Mineral, floral, and direct; fleurs de sel, apricot, thyme, and delicate notes of medicinal herbs. Straw yellow in the glass, savory, enveloping, and long on the palate.
